Ingredients
Wrap
- 2 rice paper sheet
- ⅛ cup carrots (shredded)
- ⅛ cup cucumbers (sliced thin)
- ½ cup lettuce
- ⅛ cup bell peppers (sliced thin)
- 1 tbsp fresh cilantro
Peanut Sauce
- 2 tsp peanut butter (smooth or chunky)
- 1 tsp tsp rice vinegar
- ½ tsp soy sauce (or liquid aminos)
- ½ tsp siracha
- 2 tsp coconut milk
Instructions
- Fill a large pan 1/3 way with water. Warm the water but do not boil.
- Add rice sheet into water, holding onto one edge. When rice sheet is slightly softened remove from water and put on plate.
- Add 1/2 of the carrots, cucumber, lettuce, peppers, cilantro. Fold in sides and roll. Repeat with next rice papper wrap
- Mix all ingredients together and stir well. For the peanut sauce, mix all ingredients together. Serve with wrap.

Yummy! I did some subbing based on what was in my fridge–veggies! Nice sauce!
Way to get creative! You really can put most anything in the wraps.
