This tastes as delicious as traditional tortillas but are much easier to make!

Ingredients
- ⅓ cup black beans (canned, rinsed, and drained)
- 1 tbsp green chilies (diced - fresh or canned)
- ⅓ cup red enchilada sauce
- ⅔ cup chicken (cooked; diced or shredded)
- 1 tortilla (10")
- 4 tsp corn (fresh or frozen (thawed) recommended)
- 4 tsp onions (diced)
- ⅓ cup cheese (your choice, we used cheddar. Its always cheaper and healthier to buy a block of cheese and shred it yourself!)
Instructions
- Preheat oven to 350º.
- Lay 1/3 of the tortilla into the bottom of a prepared baking dish. Sprinkle cooked chicken on top of the tortilla.
- Rinse and drain the beans and pour on top of the tortilla. Sprinkle the diced onion on top of that, and then add the green chilies on top of all of that. Sprinkle half the shredded cheese over everything.
- Add the remaining tortilla on top of that, and then, pour your enchilada sauce over the tortillas. Top with the remaining cheese.
- Bake for about 30-40 minutes
- Take out and let cool for 10 minutes. Then, cut in and enjoy! Or, let cool for a few hours, and then pop into your freezer to save and eat for later.

i fixed this Enchilada for my Son in law, 2 of my Grandkids and myself it was just like what my late Mother would cook for me. my Grandkids asked me to make it again the next day. I think they would eat it everyday. I even added bell peppers to mine.

What is a “k” calorie? 1616 seems so high for one serving? “Calories: 1616kcal”

Do you use corn or flour tortillas? Also what is the tsp corn? Corn what? Thanks for your help..
I prefer corn tortillas as they are more nutrient dense but you can use either type. As for the corn, you can use fresh, frozen, or canned corn. I hope that helps!
