Ingredients 

  • 4 oz chicken breast
  • ½ cup Brussels sprouts (halved)
  • ¼ cup onion (diced )
  • ¼ cup quinoa (cook according to package)
  • ½ tbsp olive oil
  • salt & pepper (to taste)

Instructions 

  • Preheat oven to 400°. Toss Brussels sprouts and onions with olive oil, salt, and pepper; roast for 20 minutes or until desired doneness.
  • Grill chicken for about 5-7 minutes per side or until cooked through.
  • Serve chicken, onions, and Brussels sprouts over quinoa.
