Ingredients 

  • 4 oz salmon
  • ½ sweet potato (small, cubed)
  • ½ cup broccoli (florets)
  • ½ tbsp olive oil
  • salt & pepper (to taste)

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potato and broccoli with olive oil, salt, and pepper and bake for 15 minutes.
  • Season salmon with seasoning of your choice. Add to oven with the sweet potatoes / broccoli and cook an additional 15 minutes.
