Ingredients:

Dressing-

  • 1/4 cup olive oil
  • 2 tbsp sesame oil
  • 1/4 cup rice vinegar
  • 2 tbsp sweet chili sauce
  • 1.5 tsp soy sauce
  • 1 tbsp sriracha
  • 2 tsp grated ginger
  • 2 tsp sesame seeds

Bowls-

  • 4 cups Lettuce
  • 4 cups cooked rice
  • 1 lb pork thinly sliced
  • 1/4 cup dressing
  • 1 tsp soy sauce
  • 1 tbsp sweet chili sauce
  • 2 cups Carrots - shredded
  • 1 small Cucumber - thinly sliced
  • 1 Onion  - thinly sliced
  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp sugar
  • 4 Radishes thinly sliced
  • 1  Pepper thinly sliced
  • Jalapeños - remove seeds and slice
  • 1 cup Cilantro
  • 1 Lime cut into four pieces
  • 1/8 cup chopped peanuts

Instructions:

For dressing, put all ingredients except sesame seeds in the blender. Blend until smooth. Add sesame seeds and stir.

For bowl, combine 1/4 cup dressing, soy sauce, sweet chili. Stir and pour over sliced pork. Let sit for 15 minutes - 4 hours. Combine water, vinegar and sugar in a small pan. Bring to a boil. Add onions & radishes and set to the side.
