Grilled Chicken over White Bean, Garlic Mash

The beans in this dish are low in calories, high in fiber and protein, and add a delightful texture to the grilled chicken.

Ingredients 

  • 1 ½ cloves garlic
  • 1 - 6 oz chicken breast
  • 8 - oz great white northern beans (drained)
  • 1 tbsp lemon
  • ½ tsp dried rosemary
  • 1 splash olive oil
  • salt and pepper (to taste)

Instructions 

  • Grill or cook chicken breasts.
  • Roast garlic in the oven at 400º for about 30 minutes or until slightly brown.
  • Once roasted, add garlic into a Ninja or a blender with the drained great white northern beans and blend until smooth. Add the lemon juice and blend until the ingredients are mixed well.
  • Put white bean, and garlic mash onto a plate, and then put the cooked chicken on top of the mash.
  • Sprinkle dried rosemary over the top of the chicken along with olive oil. Add some salt and pepper to taste, and you're ready to eat!
