This Curry Chicken Salad made with Greek yogurt and currants is healthy, protein-packed, and versatile!

Ingredients 

  • ¾ cup chicken (cooked, cubed)
  • 1 tbsp currants
  • ½ cup arugula (packed, whole or chopped)
  • 1 stalk celery (finely chopped)
  • ½ tsp lemon juice
  • 1 ½ tsp mayonnaise
  • 1 tbsp plain Greek yogurt
  • 1 tbsp tarragon (fresh, minced)
  • ½ tsp curry powder
  • salt and pepper (to taste)
  • lettuce or rice (you choose!)

Instructions 

  • Add all ingredients one at a time, into a bowl and mix. Serve on a bed of rice or your choice of greens.
