Ingredients
- ¾ cup chicken (cooked, cubed)
- 1 tbsp currants
- ½ cup arugula (packed, whole or chopped)
- 1 stalk celery (finely chopped)
- ½ tsp lemon juice
- 1 ½ tsp mayonnaise
- 1 tbsp plain Greek yogurt
- 1 tbsp tarragon (fresh, minced)
- salt and pepper (to taste)
- ½ tsp curry powder
- lettuce or rice (you choose!)
Instructions
- Add all ingredients one at a time, into a bowl and mix. Serve on a bed of rice or your choice of greens.
