Ingredients

  • 6 slices cooked bacon (uncured/no nitrate) - diced
  • 3 green onions - diced
  • 3 cups diced potatoes (I like golden potatoes)
  • 1 cup sliced celery
  • 2 cloves garlic - chopped
  • 2  10 ounce cans chopped or minced clams in juice, undrained
  • 1 cup vegetable broth
  • 1/2 - 1 teaspoon white pepper
  • 1/2 teaspoon dried thyme
  • 1 tsp salt
  • 2 cups almond milk unsweetened
  • 1/3 cup fresh parsley

Directions:

Add bacon, green onions, potatoes, celery, garlic, clams, broth, white pepper, thyme, salt and the juice to a large pot. Cover and simmer over med/low heat for 20 minutes or until potatoes are just just soft. Add milk and cook additional 5 minutes until hot. Pour into bowls and top with parsley.
