Directions:
Preheat oven to 425. Peel and dice sweet potatoes into bite size pieces. Put into large bowl and add 1 tbsp olive oil, 2 tsp chili powder and 2 tsp ground cumin. Stir well. Cover the bottom of a 13 x 9 baking pan with 1 tbsp of olive oil. Add potatoes and place in over. Cook for 20 minutes and stir and cook an additional 20 more minutes. Cover potatoes with toppings of your choice and cilantro cream (sauce or dip)
