Mushroom, Arugula and Goat Cheese Frittata

• 4 pasturized eggs
• 1/4 cup milk: almond, coconut, or raw
• 1 tbsp butter
• 1 cup sliced mushrooms
• 1 cup packed arugula chopped
• 1/4 cup goat cheese crumbled
• Preheat the oven to 375. Beat the eggs and milk and set aside. Melt the butter over medium-high heat in an oven safe pot. Add the mushrooms and cook until almost soft. Then add the arugula, stir, and let it wilt. Add the eggs/milk. Crumble the goat cheese over it. Bake for 20 minutes.
