Nut Butter Cookies

  • 3 Dates, pits removed and cut in half
  • 1 Egg
  • 2 tbs. Butter
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Vanilla
  • 1/2 tsp. Cinnamon
  • 1 cup Flour
  • 1/2 cup pecan* butter (or other nut butter)
  • 1/2 cup pecans (whole or halves) for topping

Place dates in 1/4 cup of hot water and let soak until softened. Place dates in food processor with the water and blend until mostly smooth. Add the dates and all other ingredients with the exception of the whole or half pecans. Prepare a cookie sheet. Create ping pong size balls with the dough and place them on the sheet. Press gently with fork and add a whole or half pecan on top, if desired. Bake at 375° for 10 minutes. Makes about 20 cookies.
