Ingredients:

  • 1/2 ripe banana (the riper the banana, the sweeter your pancake will be)
  • 1 eggs
  • 1 tsp of coconut oil
  • top with peanut butter

Directions:

Put eggs and banana in a food processor or blender and blend until smooth. Melt coconut oil in a pan over med heat. Pour 1/2 of mixture and cook until browned on both sides.

Makes 2 small pancakes
