Ingredients:

  • 4 tbsp. butter or oil
  • 1/4 c. all-purpose or GF flour
  • 1 small yellow onion, chopped
  • 1 medium bell pepper, chopped
  • 2 celery stalks, chopped
  • 1 cup carrots, chopped
  • 3 cloves garlic, minced
  • 8 oz. andouille sausage, sliced into 1/2" pieces
  • 1 tbsp. cajun seasoning
  • 1 (15-oz.) can fire-roasted diced tomatoes
  • 4 c. chicken broth
  • 1 lb. shrimp, peeled and deveined
  • 3 green onions, sliced
  • Salt & pepper to taste

Directions:

Put butter/oil in a large skillet and cook over medium heat until melted. Add flour and stir constantly, until brown in color, about 10 minutes. Add onions, peppers, celery, carrots, garlic, cajun seasoning and stir. Add sausage, diced tomatoes, chicken broth and turn up heat and bring to a boil. Once boiling reduce heat to low and simmer for about 45 minutes and sauce is thickened, stir occasionally. Add shrimp & green onions, stir and cook for 10 minutes. If needed add slat and pepper.

Option: Serve over rice and sprinkle with fresh parsley
