Ingredients
- ¼ cup chicken broth
- ¼ cup tomatoes (canned, drained)
- ¼ onion (diced)
- ½ red pepper (diced)
- ¼ lb chicken (boneless, skinless breast)
- ½ tsp Hungarian paprika
- ¾ tsp olive oil
- â…› tsp caraway seed (optional)
- 2 ¼ tsp sour cream (more or less to taste)
- 4 tsp plain yogurt
- 1 tbsp fresh parsley (minced)
Instructions
- Add olive oil to a large pan and heat over med/high heat. Add chicken, stir and cook for 7-10 min. Add paprika and stir well.
- Add onions, peppers, and broth, and cook uncovered for 10 minutes. Add tomatoes, sour cream, yogurt, and caraway seeds.
- Stir well and cook until heated. Add salt and pepper to taste.
- Place in bowls and sprinkle 1 tbsp fresh parsley over each serving.
