Refreshing Summer Meals on a Hot Day

The last thing anyone wants to do on a hot summer night is to turn on your oven or gill and break a sweat cooking!  If that sounds like you…we have some delicious summer recipes that require no cooking.  From hearty salads to quick, easy and filling snacks, these recipes are just what you ordered to keep cool.

1.Peach Berry Salad

2.Mango and Avocado Salad

3. Lettuce Wraps

These lettuce wraps are  simple to make, especially if you get a rotisserie chicken from the grocery store instead of heating up your house cooking chicken.  Find the recipe here.

 

4. Mexican Lettuce Wraps

5. Tuna Poke

6. Zesty Mango Salsa

7. Zesty Mango Fish Tacos

Make these tacos with left over fish or use frozen precooked fish (mahi mahi or salmon are best) and top them with the Zesty Mango Salsa.  You won’t have any leftovers with this RECIPE!

 

8. Turkey Lettuce Wraps/Rollups
