Ingredients
- 1 tbsp butter (can substitute olive oil)
- 1 tbsp all-purpose flour
- ¼ yellow onion (chopped)
- ¼ bell pepper (chopped)
- ½ stalk celery (chopped)
- ¼ cup carrots (chopped)
- ¾ cloves garlic (minced)
- 2 oz andouille sausage (sliced into 1/2" pieces)
- 1 ½ tsp cajun seasoning
- ½ cup fire-roasted tomatoes (diced)
- 1 cup chicken broth
- ¼ lb shrimp (peeled and deveined)
- ¾ green onions (sliced)
- salt & pepper (to taste)
Instructions
- Put butter/oil in a large skillet and cook over medium heat until melted. Add flour and stir constantly, until brown in color, about 10 minutes.
- Add onions, peppers, celery, carrots, garlic, cajun seasoning and stir. Add sausage, diced tomatoes, chicken broth and turn up heat, and bring to a boil.
- Once boiling, reduce heat to low and simmer for about 45 minutes or until sauce is thickened, stirring occasionally. Add shrimp & green onions, stir, and cook for 10 minutes. If needed add salt and pepper.
Notes
Makes 2 servings.
Option: Serve over rice and sprinkle with fresh parsley.
