White Bean, Fennel and Sausage Soup

Ingredients 

  • 1 tsp oil (grapeseed or avocado are ideal)
  • â…™ fennel bulb (diced)
  • â…™ medium onion
  • ½ clove garlic
  • â…™ tsp crushed red pepper (more or less to taste)
  • â…” cup chicken broth
  • â…“ lb chicken sausage (Italian is preferred, chopped)
  • ½ cup white beans (drained)
  • fennel greens (optional)
  • salt and pepper (to taste)

Instructions 

  • Use a non-stick pan or cast iron skillet to cook chicken sausage until done. Set aside.
  • Add oil to a large pot and heat on the stovetop over medium heat. Add fennel, onion, and garlic. Stir then cover and cook for 5 min.
  • Add broth and red pepper and cook for 15 min. Add sausage and beans and cook additional 10 min. Add salt and pepper to taste.
  • Serve in bowls and top with minced fennel greens (optional).
