Ingredients
- ½ tsp olive oil
- ½ tomato (ripe, diced)
- 3 olives (your choice, we recommend kalamata)
- 3 shrimp (you can add more or less)
- 1 ½ tsp feta cheese
- ½ tsp oregano
- 2 tbsp red bell peppers (roasted)
- 2 tbsp onions (carmelized)
Instructions
- Heat up a saucepan with olive oil on medium-high heat. Sauté the diced ripe tomatoes for 2-3 minutes, then add the already cooked shrimp and cook 3-4 minutes, making sure not to overcook them.
- Add the roasted red bell peppers, and the cooked onions into the pan with the shrimp and tomatoes.
- Dice the olives and add them and the rest of the ingredients to the shrimp, onions, and peppers. Salt and pepper to taste and serve.
