INGREDIENTS:

  • 1 stick salted butter, softened (1/2 cup)
  • 1/3 cup of applesauce (make sure there's no additional sugar added)
  • 2 tblsp of maple syrup
  • 1/2 tsp vanilla extract
  • 1 tsp almond extract
  • 2 cups of gluten-free flour (can use almond, oat, coconut or a blend of gluten-free flours)
  • 1/3 cup sliced almonds, crushed up
  • *optional dark chocolate chips

INSTRUCTIONS:

Preheat the oven to 350 degrees. Mix all the ingredients together in a mixing bowl and mix well. Grease down a cookie sheet and divide the dough into 12 balls. Then, shape the balls into crescent shapes, as seen in the pictures. Bake for 15 minutes. Remove and cool before serving.

*Optional: before baking, you can add a single chocolate chunk onto each cookie for a little extra yum! You can also melt the chocolate chips and dip one half of the cookie into the chocolate for another tasty variation
