INGREDIENTS:

  • 2 cups diced broccolini
  • 1/2 pound ground Italian sausage
  • Gnocchi 2 servings (approx 1 cup uncooked)
  • 2 tblsp Olive oil
  • Parmesan Cheese shavings.

INSTRUCTIONS:

Fill pot with water and bring to a light boil. Add in broccolini. Cook for 5 min. Add gnocchi to the same pot and cook an additional 5 minutes or until gnocchi begin to float to the top.
In a separate pan sauté sausage. Chop at sausage as it cooks to break into small pieces. Drain the broccolini and gnocchi and then add to the pan of sausage. Add the olive oil and stir. Plate the broccolini, gnocchi, and sausage and top with shaved* or grated Parmesan cheese (season with salt and pepper) * I like to use a potato peeler for the parmesan cheese to shave longer ribbons to give it a more elegant look!

Makes around 4 servings
