INGREDIENTS:
  • 1 cup cubed bread
  • 1/3 cup olive oil plus 1 tbsp (for bread)
  • 1 cup sliced grape tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1 clove garlic minced
  • 3 tbsp balsamic
  • 1 tsp crushed red pepper
  • 1/2 cup chopped fresh basil

INSTRUCTIONS:

Heat up your olive oil in pan on medium heat. Once hot, add in your salt, pepper, crushed red pepper and add cubed bread. Stir and cook until bread is lightly browned. Set aside. In a salad bowl, add in cucumber, tomatoes, red onion, balsamic, olive oil, and basil. Mix the warm croutons into the rest of the salad right before you serve. Enjoy!
