• 1 baked sweet potato with the skin removed
  • 2 cups packed kale (rib removed)
  • 6 eggs, beaten together
  • 1/3 cup of goat cheese
  • 2 tbsp of olive oil
  • salt and pepper to taste
  • *optional - for added protein, you can add in some cooked quinoa into the mixture right before you put it in the oven. 


Crack six eggs into a medium-sized bowl and mix together with a whisk or a fork. Coat the bottom and sides of a 9" x 9' baking pan with 1 tblsp olive oil. Take your sweet potato (already baked) and take the skin off.  Cut your sweet potato into bite-size chunks and sauté with 1 tblsp olive oil for about 5 minutes. Add the kale and cook until it is wilted.  Put sweet potato and kale int your prepared baking pan. Pour eggs over sweet potatoes and kale. Add crumbled goat cheese over egg mixture.

Bake in a preheated 375 degrees for 15 minutes, let cool for ten minutes, and then enjoy!
