• 2 cups cooked vegetables (use your favorite vegetables or to save time buy
  • frozen, organic mixed vegetables)
  • 1/4 cup crumbled blue cheese,
  • 2 slices bread cut into cubes
  • 3 eggs
  • 1/2 cup flour
  • 3/4 cup almond milk (or reg. milk)
  • oil spray for pan (be sure the spray has only oil listed as ingredients. I suggest avocado or grape seed oil)


Preheat the oven to 375 and use the oil to coat your casserole dish with the oil. Mix all your ingredients together in a casserole dish. Put in over for 25 minutes.
