These little energy gems make for a great breakfast or a perfect snack!

Ingredients 

  • 3 carrots (baby)
  • 1 egg
  • ¼ green onion
  • 1 ½ tsp feta cheese (optional)

Instructions 

  • Preheat oven to 350º.
  • Grease muffin pan.
  • Put carrots and eggs in blender. Blend until carrots are the size of rice and place in a bowl.
  • Thinly slice green onion and add to the bowl. Add salt and pepper to taste.
  • Pour the egg mixture into muffin tin. Top with feta crumbles. Cook for 15 minutes or until eggs are set.

Notes

Option to save time: pour egg mixture into oiled pan and scramble.
