Ingredients
- 3 carrots (baby)
- 1 egg
- ¼ green onion
- 1 ½ tsp feta cheese (optional)
Instructions
- Preheat oven to 350º.
- Grease muffin pan.
- Put carrots and eggs in blender. Blend until carrots are the size of rice and place in a bowl.
- Thinly slice green onion and add to the bowl. Add salt and pepper to taste.
- Pour the egg mixture into muffin tin. Top with feta crumbles. Cook for 15 minutes or until eggs are set.
Notes
Option to save time: pour egg mixture into oiled pan and scramble.
