French toast, no guilt, what more needs to be said!

Ingredients
- 1 ½ tsp coconut oil
- 1 egg
- â…“ cup milk (any type)
- â…“ tsp cinnamon
- 1 tbsp orange juice (no sugar added)
- 2 slices bread (organic, gluten-free bread is preferred)
- ½ tsp vanilla
- 2 tbsp plain yogurt
- ½ cup strawberries (stems removed and sliced)
Instructions
- To make sauce, place strawberries in a small saucepan and cook covered until soft and juices are released. Add vanilla and yogurt and stir. Continue heating over low heat until warmed.
- Put oil in a pan and heat over medium heat.
- In a shallow bowl, mix eggs, milk, cinnamon, and orange juice together.
- Quickly "soak" bread in egg mixture on both sides and then place into theh hot pan.
- Cook both sides until golden brown on each side.
- Place french toast on plate and top with strawberry and yogurt sauce.
