French toast, no guilt, what more needs to be said!

Ingredients 

  • 1 ½ tsp coconut oil
  • 1 egg
  • â…“ cup milk (any type)
  • â…“ tsp cinnamon
  • 1 tbsp orange juice (no sugar added)
  • 2 slices bread (organic, gluten-free bread is preferred)
  • ½ tsp vanilla
  • 2 tbsp plain yogurt
  • ½ cup strawberries (stems removed and sliced)

Instructions 

  • To make sauce, place strawberries in a small saucepan and cook covered until soft and juices are released. Add vanilla and yogurt and stir. Continue heating over low heat until warmed.
  • Put oil in a pan and heat over medium heat.
  • In a shallow bowl, mix eggs, milk, cinnamon, and orange juice together.
  • Quickly "soak" bread in egg mixture on both sides and then place into theh hot pan.
  • Cook both sides until golden brown on each side.
  • Place french toast on plate and top with strawberry and yogurt sauce.

Notes

Makes 2 servings.
