This stuffed pepper soup combines all of the savory goodness of traditional stuffed peppers in a convenient and cozy bowl.

Ingredients
- ¼ lb ground beef (you can substitute ground turkey)
- ¼ onion (diced)
- ¼ red bell pepper (diced)
- ¼ green bell pepper (diced)
- ¼ can tomatoes (diced)
- ¼ can tomato soup (can substitute tomato sauce)
- ½ cups brown rice (measure cooked)
- ¼ can chicken broth
- ¼ tsp garlic powder
- salt and pepper (to taste)
- cheddar cheese (grated; optional garnish )
- sour cream (optional garnish)
- green onion (can substitute chives, optional garnish )
Instructions
- Brown and crumble the ground beef, along with the onion and peppers. Cook until done. Drain off any excess fat.
- Add remaining ingredients (please note that the rice is already cooked when you add it in). Simmer and serve! Top with garnishes. Enjoy!

I have to tell you...This is so easy and so delicious, you have to try it! This soup is rich and hearty and tastes just like a stuffed pepper, and I love stuffed peppers! My Mom made them a lot when I was growing up and this soup has that same great homemade yumminess you expect from a stuffed pepper! Happy Fall Y'all!

I use Beef broth or Vegetable broth instead of chicken broth
This was delicious! I did trade the rice for quinoa and used roasted garlic tomato in the can. Very happy about this recipe ????
