Ingredients
- ½ pound chicken thighs (skinless and fat removed - can substitute chicken breasts)
- 3 tbs sweet hot mustard
- 2 tbsp tarragon (fresh)
- ¼ tsp black pepper
Instructions
- Put all ingredients in a bowl, stir, cover, and refrigerate. Marinate the chicken for at least 1 hour or as long as overnight.
- Using a hot grill cook chicken until the internal temperature of the meat reaches 165º.
- When the sweet hot mustard gets a bit charred from the hot heat, it adds extra flavor.
- If you would prefer, you can bake of broil in the oven.

I have never cooled with tarragon before. We enjoyed its mild anise flavor with the mustard. Remember to use only the leaves; discard the stems.
Yes, thanks for sharing that tip on tarragon! Strip the leaves and don’t use the stems. The stems can be tough and woody.
