Ingredients
- 1 ½ sweet potato (cooked until soft)
- ½ cup corn (can use frozen; organic preferred)
- 1 egg
- 1 tbsp corn starch
- 1 ½ tsp coconut oil
Instructions
- Mash up the sweet potato and add all ingredients to it. Stir until well blended.
- Add coconut oil to a pan and heat on medium heat.
- Form sweet potato mixture into small patties and place in the pan once it is hot. Cook on one side until browned and then flip. Cook on the other side until browned. Enjoy

I tried this and it just came out mushy and not crispy- I think if you could add some tips to get it to come out crispy. Did I boil the potatoes too long? I basically made mashed sweet potatoes to work with first.
Sorry this happened to you. It;s hard to know the issue with out seeing exactly what you’re doing. I wonder if you had enough oil in the pan?? Also, cook over medium heat so it doesn’t burn and do not cover. Do any of these things seem like they could help. Also, maybe try baking the potatoes and then peeling them or really draining the potatoes if you boil them.
