Ingredients
- ½ bulb fennel (stems removed & chopped)
- ¼ tsp salt
- ¼ tsp lemon zest
- â…› lemon lemon (juiced)
- 1/16 cup parmesan (grated)
- 1/16 cup olive oil
Instructions
- Preheat oven to 400°.
- In a small bowl mix together oil, zest, lemon juice, and salt. Pour over fennel and toss to coat.
- Place parchment paper on a baking sheet. Add fennel and cook for 15 minutes. Add parmesan and cook for an additional 15 minutes. Enjoy!
