Ingredients 

  • cup whole wheat flour
  • 4 tsp flax seed (ground)
  • tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 4 tsp coconut sugar (can substitute other healthy sweeteners)
  • 1 egg (beaten)
  • 4 tsp coconut oil (melted)
  • ¼ cup applesauce
  • 2 ½ tbsp skim milk (or dairy-free optional)
  • 1 tsp vanilla
  • apple ( chopped finely)
  • 1 ½ tbsps walnuts (chopped (these are optional))

Instructions 

  • Mix together all ingredients.
  • Pour batter into prepared muffin pan and bake for 15 - 18 minutes or until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.

Notes

Makes approximately 4 muffins.
