Ingredients 

Salad

  • 1 ½ cups spring greens mix (or any greens of your choice)
  • English cucumber (very thinly sliced)
  • red onion (peeled and very thinly sliced)
  • 2 tbsp pepitas (can substitute any toasted nuts of choice)

Dressing

  • 2 ¼ tsp olive oil
  • ¾ tsp lemon juice (can substitute red wine vinegar)
  • ¼ tsp Dijon mustard
  • ¼ clove garlic (minced (or 1/2 teaspoon garlic powder))
  • salt and pepper (to taste)

Instructions 

  • Mix all dressing ingredients - oil, lemon juice, mustard, garlic, and salt and pepper together and whisk until blended.
  • Mix all salad ingredients in a bowl and top with dressing.
