Shrimp ceviche (Ceviche de Camarón)

Ingredients 

  • 2 ½ oz shrimp (peeled and deveined)
  • cup red onion (dice small)
  • cup tomatoes (diced)
  • 2 tsp cilantro (chopped)
  • 2 tsp lemon juice (freshly squeezed, can substitute lime juice)
  • 4 tsp orange juice (freshly squeezed)
  • 1 tsp jalapeno (minced, seeds removed)
  • 1 tsp Dijon mustard
  • cloves garlic (minced)
  • ½ tsp oil
  • salt and pepper (to taste)

Instructions 

  • Heat up a pan on medium heat and add garlic and oil. Add in shrimp and cook for 2-3 minutes. Do not overcook.
  • In a separate bowl, add lemon or lime juice, orange juice, jalapeños, tomatoes, mustard, onions, salt, and pepper. Mix.
  • Add the shrimp and chill in the refrigerator for an hour or two.
  • Garnish with cilantro and serve with tortilla chips or plantain/banana chips.
