Ingredients
- 2 ½ oz shrimp (peeled and deveined)
- ⅙ cup red onion (dice small)
- ⅙ cup tomatoes (diced)
- 2 tsp cilantro (chopped)
- 2 tsp lemon juice (freshly squeezed, can substitute lime juice)
- 4 tsp orange juice (freshly squeezed)
- 1 tsp jalapeno (minced, seeds removed)
- 1 tsp Dijon mustard
- ⅓ cloves garlic (minced)
- ½ tsp oil
- salt and pepper (to taste)
Instructions
- Heat up a pan on medium heat and add garlic and oil. Add in shrimp and cook for 2-3 minutes. Do not overcook.
- In a separate bowl, add lemon or lime juice, orange juice, jalapeños, tomatoes, mustard, onions, salt, and pepper. Mix.
- Add the shrimp and chill in the refrigerator for an hour or two.
- Garnish with cilantro and serve with tortilla chips or plantain/banana chips.
