Ingredients 

  • 2 ⅔ ounces brown rice noodles (usually found in the Asian section of the store)
  • 2 tsp coconut oil
  • pound medium shrimp (peeled and deveined)
  • ¼ cup snow peas (trimmed)
  • 1 ⅓ scallions (thinly sliced)
  • cloves garlic (chopped)
  • 4 tsp oyster sauce (found in the Asian section of the store)
  • 2 tsp rice vinegar
  • 1 tsp soy sauce (Bragg Liquid Aminos is a great option for gluten free)
  • crushed red pepper (for serving)

Instructions 

  • Cook Noodles according to package.
  • Heat oil in a large pan over high heat. Add shrimp, snow peas, scallions and garlic. Stir while cooking. Cook for about 3 minutes.
  • Add oyster sauce, vinegar, and soy sauce. Stir.
  • Add the noodles and stir.
  • Serve and sprinkle with crushed red pepper.
