Ingredients 

  • ½ lb potatoes (cubed, skins on(try and use golden or russet potatoes))
  • ¼ onion (diced)
  • 2 cloves garlic
  • ¼ tsp achiote oil (can substitute 1 tsp of olive oil with 1/4 tsp of paprika and 1/4 tsp of turmeric)
  • â…› tsp cumin
  • ¼ tsp salt
  • â…œ cup milk (can also use almond or coconut )
  • vegetable broth (can substitute chicken broth, use to achieve desired consisitency)

Instructions 

  • Put your cubed potatoes, onion, and garlic into a pot with simmering water. Continue to simmer until your potatoes are cooked and tender.
  • Place all ingredients, including the cooked potatoes, into a blender and blend until smooth. It is supposed to be thick but if it's too thick, add a bit of broth.

Possible toppings for soup
sliced up avocado
a few sprigs of parsley
a sprinkle of cheddar or Parmesan cheese
a few sprinkles of spicy pepper
