Ingredients
- ½ lb potatoes (cubed, skins on(try and use golden or russet potatoes))
- ¼ onion (diced)
- 2 cloves garlic
- ¼ tsp achiote oil (can substitute 1 tsp of olive oil with 1/4 tsp of paprika and 1/4 tsp of turmeric)
- â…› tsp cumin
- ¼ tsp salt
- ⅜ cup milk (can also use almond or coconut )
- vegetable broth (can substitute chicken broth, use to achieve desired consisitency)
Instructions
- Put your cubed potatoes, onion, and garlic into a pot with simmering water. Continue to simmer until your potatoes are cooked and tender.
- Place all ingredients, including the cooked potatoes, into a blender and blend until smooth. It is supposed to be thick but if it's too thick, add a bit of broth.
